Potato Salad

I love this potato salad either warm or cold. Great with Hamburgers or any sort of sausage.

 

Ingredients

4 Potatoes
4 Eggs, hard boiled, chopped
1 teaspoon paprika
1 clove garlic, chopped
2 tablespoons mustard (prepared)
1/2 cup mayonnaise
1 stalk of celery, chopped
1/4 cup sweet relish
1 tablespoon sugar
1 tablespoon cider vinegar

 

Cooking Directions

Fill a large pot 3/4 with salted water. When the water is boiling, add potatoes. Cook for 20 minutes.  Drain, peel, chop.  Place in large bowl and add vinegar.
 
Peel hard boiled eggs (see link for cooking directions) and chop.  Add all ingredients (except potatoes) to a different mixing bowl and combine.  Pour mixture over potatoes.  Gently fold in the mixture.  Top with paprika.  Serve warm or cold.

Meanwhile (as the potatoes are cooking), chop 4 hard boiled eggs (so I normally boil the eggs first)

In this case, the mise en place includes eggs, paprika, salt/pepper, celery, mayo, garlic, sugar, relish and mustard.
 

Place all ingredients (except potatoes and vinegar) in mixing bowl.

Mix together with a spatula.
